Chef Izzy's Green Velvet Cupcakes with Irish Cream Frosting

With Spring right around the corner green is the color of the season! These delicious green cupcakes will surely be a hit at your next St. Paddy's day party!





Ingredients

For the Cupcakes:

  • 1/2 C (1 stick) unsalted butter, room temperature

  • 2 ml. Cannabis oil

  • 1 1/2 C sugar

  • 2 large eggs

  • 1 tsp. vanilla extract

  • 2 oz. green food coloring

  • 2 Tbsp. unsweetened cocoa powder

  • 2 1/4 all-purpose flour

  • 1 tsp. salt

  • 1 tsp. baking soda

  • 1 C buttermilk

For the Frosting:

  • 1/2 C (1 stick) unsalted butter, room temperature

  • 1 8-oz. block of cream cheese

  • 8 C powdered sugar

  • 1/2 tsp. kosher salt

  • 1 oz. Baileys Irish Cream

  • 1-2 oz. heavy cream

  • shamrock sprinkles (optional)


Instructions



Preheat the oven to 350 degrees. Line 2 muffin tins with paper liners. In a small bowl, whisk together the cocoa powder and the green food coloring to make a paste. Set aside. In a medium mixing bowl, whisk together the flour, baking soda and salt.

In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter, sugar, and cannabis oil (slowly add the cannabis oil while mixer runs and butter is smooth)until light and fluffy (about 4 minutes). Add the eggs one at a time, mixing until combined. Add in the vanilla. Add in the cocoa paste.

On low speed, alternately add the flour mixture and the buttermilk, beginning and ending with the flour.

Using a large (3-Tbsp.) scoop, place the batter in the prepared pans, and bake for 22-25 minutes, or until a toothpick inserted in the center of several cupcakes comes out clean.Cool in the pans for 10 minutes before cooling completely on wire racks.

In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and cream cheese, about 2 minutes. On low speed, begin adding half the powdered sugar.

Scrape the bowl, then add the salt. one ounce of the heavy cream and all the Baileys. Add the rest of the powdered sugar. Once all the sugar has been added, whip the mixture on high for 1 minute.

Pipe or decorate the cupcakes as desired, topping with sprinkles if using
